I'm not saying that I don't believe them, I just don't understand how that could happen. Do these people freak out from the shedding and assume that it's making their hairloss speed up (which is understandable as I'm shedding right now)? Or can minoxidil actually destroy your hair and void any chance of regrowing the hair lost during the shed??

Minoxidil can cause initial shedding but will not result in permanent hair loss. I can't say the same for finasteride though as I shed a lot of hair on my hairline while on it and that hair never grew back.
