I know most people will say no that's not possible, but I'm not sure whats going on.

If when I get into the shower an run my hands through my hair with only water, I get 0-2 hairs on my hands each time.

Once I put shampoo in the number slowly goes up. Maybe 1 the first time maybe 3 the next. Maybe 5 the final time.

What's going on here?

The shampoo is just giving you a better grip of your hair. You can put honey in your hair and it will have the same effect.

You might have an allergic reaction to some of ingredients in the shampoo you are using. Who knows? Just use warm water to wash your hair or try different shampoos...

All you're doing here is just getting a better grip on your hair with shampoo.

It happens to me too. Rinse your hair with water and run your hands through and 1 or 2 hairs come out then apply shampoo and 10-15 hairs come out.

Your lathering up and getting a better grip which will pull on your hair. Nothing unusual is happening here.
