Trying to build my core but can't find a good exercise that targets my lower back. Suggestions?

For lower back, deadlifts are king. I also perform, stiff-leg and straight-leg deadlifts, which emphasis the hamstrings more. I also see people doing tons of weighted hyperextensions and good-mornings. But I avoid these exercises because they look more harmful than beneficial.

Be extremely careful with the back.

Very true. Just remember proper form also includes following the simple rules of posture, which includes: head slightly back and straight ahead, shoulders and butt back, chest out and firm, lower back arched, stomach neutral. You want to follow and fortify the nature curvature of the spine, AT ALL TIMES. Follow military posture and you'll avoid a lot of injury.
