cooking dried beans

Ok, how long can I soak beans in water before they go bad? And if I soak them in the refridgerator, will they actually soak?

Also, do canned beans come from fresh beans or are they dry before boiled, and are beans dry when they are harvested?

I'm sure they will re-hydrate just fine in the fridge, in fact I think it's recommended to do this when the ambient temp. is high or if you want/need to leave them overnight.

Beans are picked fresh and then either cooked and canned or dried.
